1 1/2 oz Vodka
1/2 oz Giffard Ginger of the Indies
1 oz Pear Juice (Wilde)
1/2 oz Fresh Lemon Juice
Manuka Honey Foam
Garnish with Pear Stuffed Hibiscus Flower on Skewer
Finish with Flamed Lemon Oil
An extravagant experience of cocktail theatre in the preparation of this delicious elixir.
Impress your guests:
In a mixing glass add, Vodka, Liqueur, Pear Juice & Fresh Lemon Juice. Add cracked ice and shake for 10 seconds.
Double strain into chilled martini glass.
Top with Manuka Honey Foam, then drizzle hibiscus syrup in a spiral motion on top of the foam **
Finish it off with flamed Lemon Oil**
* To Make Mankua Honey Foam:
2 oz Fresh Lemon Juice
3 oz Manuka Honey
4 egg whites
9 oz water
Mix all ingredients together in mixing bowl and then transfer to Whip Creme Canister. Charge the canister with NO2 cartridge & let stand refrigerated at least 1 hour before use.
** To Flame Lemon Oil:
Transfer Lemon Oil to atomizer (small non-aerosol spray bottle). Hold a flame approximately 2-3" above the martini glass and then spray the lemon oil into the flame.
